docs(deploy): use the helper names the shell actually defines

The runbook told the operator to run n-deploy, n-ping, n-cert, n-svcs,
n-ps and n-logs. None of those exist: the umbrella flake defines them
unprefixed (deploy, ping, cert, svcs, logs), and n-ps was never a name
under any prefix -- it is svcs. librescout/DEPLOY.md was already correct
and is the reference shape.

logs() already passes --tail=100 before appending arguments, so a
trailing --tail=200 only worked because the last flag wins.
